In zwei Jahrzehnten Forschungsarbeit will man nun die “perfekte Formel” für veganes Fleisch gefunden haben. Die entscheidende Zutat im Produkt “Crump” ist Hanf. “Es ist das erste vegane Fleisch der Welt, das mehr Protein und weniger Fett als Fleisch enthält und gleichzeitig ein ausgewogenes Aminosäureprofil aufweist” meint Gründer und CEO Jürgen Jürgenson. “Crump” ist laut Startup “geschmacksneutral” und wird als getrocknetes Granulat verkauft.
Aus Gesundheitsgründen wieder weg vom Veganismus?
Viele Veganer:innen müssten aus gesundheitlichen Gründen wieder mit der rein pflanzlichen Ernährung aufhören, obwohl diese erwiesenermaßen erheblich besser in Sachen CO2- und Wasserverbrauch ist, heißt es in einer Aussendung des Startups: “Veganes Fleisch soll diese Ernährungslücke schließen, aber viele Produkte, die derzeit in den Regalen stehen, haben sich nicht nur als ungesund erwiesen, sondern auch als weniger nachhaltig als zunächst angenommen. Das Hauptrisiko geht von Sojafleisch aus”. Denn Soja oxidiere bei der Verarbeitung leicht und setzt dabei Tausende von mehrfach ungesättigte Fettsäuren frei, die Herzkrankheiten und Herz-Kreislauf-Probleme verursachen.

“Uns war klar, dass wir uns nicht an die konventionellen Inhaltsstoffe halten konnten, die derzeit für die Herstellung von Fleischalternativen verwendet werden”, erzählt Jürgen Jürgenson. “Nach Experimenten mit Pilzen, Hafer und Weizen wurde uns klar, dass keine dieser Inhaltsstoffe das Problem lösen konnte, denn wenn sie nicht stark verarbeitet sind, was wir auch vermeiden wollten, liefern sie nicht genügend Protein. Wir fragten uns dann, warum wir nicht mit einer Pflanze experimentieren, die normalerweise als Appetitanreger verwendet wird? Da kam unser ‘Aha-Moment'”. Hanf sei nicht nur eine sehr resistente Pflanze, die in vielen Anbauregionen angebaut werden kann. Er biete zudem “eine einzigartige Nährstoffzusammensetzung, die Fleisch in einer veganen Ernährung ersetzen kann”.
Derzeit läuft der Marktstart von “Crump” mit einer Kampagne auf der Crowdfunding-Plattform Indiegogo. Was in den Werbesujets vor allem auffällt ist viel nackte Haut – der Firmenname “The Naturist” lässt auch nichts anderes erwarten. Man wolle damit auch zeigen, dass man mit dem Produkt nicht dick werde, meinte Co-Founder und CMO Taavid Mikomägi gegenüber dem estnischen Magazin foundme.
